Dry Mist Engineering – Redefining Freshness for the World

Dry Mist Engineering (DME) was born from more than a decade of real-world experience keeping fresh produce fresher, longer. Our journey began with Roar Equipment, who have supplied and installed dry-mist humidification systems into supermarkets for more than 10 years, completing over 1,000 installations across refrigerated and ambient produce displays.

Those years created something priceless: proof.
Proof that humidity — when engineered correctly — dramatically reduces waste, preserves product quality, and enhances the shopper experience.


The Spark That Changed Everything

In 2023, after analysing results across hundreds of stores, Roar Equipment’s founder along with Roar's Head of Engineering, Tom Deronja, recognised a breakthrough pattern. Waste reduction in refrigerated produce cases dropped from the industry-typical 12–18% down to 1–2%. But the most surprising performance came from ambient displays, where produce was no longer being dehydrated by refrigeration.

Produce with stomata — tomatoes, grapes, strawberries — held firmness and colour longer.
Bananas lasted twice as long on display, and even in the customer’s home.
Asparagus continued to grow under dry mist conditions.

The insight was simple but revolutionary:
High-humidity, non-refrigerated environments preserve fresh produce in ways traditional refrigeration cannot.

This led to the development of the Fresh Case — an ambient display that behaves like a refrigerated case, using dry mist technology and a controlled air curtain to maintain 90–95% humidity and significantly reduced internal temperature through evaporative cooling. It delivers a natural, protective environment for fresh produce without the moisture-stripping effects of mechanical refrigeration.


When the Industry Shifted, We Built Our Own Future

In 2024, Roar Equipment’s long-time European humidifier supplier collapsed into bankruptcy. A restart followed, but with new values misaligned to Roar’s direction and the Fresh Case roadmap. Instead of compromising, Roar made a critical decision:

Build the technology in-house.
Control the quality.
Own the future.

With over 20 years of manufacturing experience in Australia and China — including premium shopfitting, refrigeration components, and high-precision hardware — Roar established a dedicated manufacturing arm in Wuxi, China:

DME brings together long-standing engineering teams, deep relationships with high-quality Chinese manufacturing partners, and complete control over every component of our systems. Today, we source, design, and manufacture our own humidification and water-filtration equipment, backed by a state-of-the-art production facility.

Software development and certain R&D partnerships are currently outsourced, but as we grow, all innovation will transition fully in-house to our global engineering team.
